Just in time to celebrate Spring my son and I decided to make some Spring Cupcakes. We used the Betty Crocker: How to Decorate Cakes and Cupcakes book as a guide for our candy filled fun.
We decided to use a cake mix that I got a Dillon’s a while back. During one of their in store promotions I was able to get this box cake for free using the promotion and a coupon, you can’t get a better bargain than that! We did use the recipe for “Creamy White Frosting” in the back of the Betty Crocker book.
We grabbed a bunch of different candies, marshmallows, and cookies to create the bugs on our cupcakes. We found that cutting marshmallows in half with a WET knife will make a clean cut and give you a nice sticky edge to dip in decorating sugar. We also carved gumdrops into various shapes to make antenna and other body parts.
This is a fun and inexpensive way to spend an afternoon celebrating the onset of Spring. Remember, the cupcakes don’t have to be perfect…you just have to have a good time with your kids when you make them.
